As the FDA moves to phase out synthetic dyes like Red No. 40, Mizzou researchers have developed a natural alternative from purple corn that holds up to the heat, light, and time demands of commercial food production and could open a new market for Midwest farmers.

The artificial dyes that color much of America’s food supply—the reds, oranges, and pinks in everything from sports drinks to cereal—are petroleum-based compounds added purely for appearance. They have faced growing scrutiny from regulators and consumers alike, and with the FDA actively working to phase several of them out, food manufacturers are under real pressure to find natural alternatives that can do the same job. The problem is that most natural colorants are fragile. They fade under heat, break down in light, and have a shelf life that makes commercial use difficult.
Researchers at the University of Missouri have found a promising solution in an unexpected place: the pericarp (the thin outer layer) of purple corn, a variety traditionally grown in South America. That layer is loaded with anthocyanins, the same natural pigments that give blueberries, red cabbage, and grapes their color. Unlike synthetic dyes, anthocyanins are rich in antioxidants with documented anti-inflammatory and heart-health benefits. The challenge was making them stable enough to survive the gauntlet of commercial food production.
After exposing purple corn colorants to the elevated temperatures typical of food processing, the Mizzou team found that roughly 75% of key color compounds remained intact after one hour: a strong baseline. When researchers coated the pigments in protective, food-grade materials, retention jumped to nearly 97% for some compounds, producing shelf-stable powders that are easy to store and transport. In a beverage system—one of the most demanding environments for natural dyes, given the acidity, light exposure, and extended storage—the purple corn colorants held up well across both acidic and basic conditions, with minimal color loss after seven weeks of refrigerated storage. The findings were published in NPJ Science of Food.
The implications reach beyond the lab. Missouri is one of the country’s leading producers of standard yellow corn, and for five years, the Mizzou team has been working with Sherry Flint-Garcia, a research geneticist with the USDA Agricultural Research Service, to adapt purple corn varieties to Corn Belt growing conditions. The most colorful South American types don’t thrive in Missouri’s climate, so the team is crossbreeding them with high-performing local varieties, working toward a version that gives Midwest farmers a new, value-added crop at exactly the moment the food industry needs what it produces.
